but we should never forget the

wisdom of the past.

Italian cuisine has always been a passion of mine. Simple, yet skilful processes, generations of knowledge and a focus on high-quality ingredients and provenance are just a few of the things that I think about when I think of the Italian dinner table. The smell of a slow-simmered tomato sauce on the stove, the creamy inside of a burrata, or the immediate warmth and perfume from being in the same room as a wood-fired oven. Italian food is the ultimate marriage of quality, simplicity and emotion.

Over the course of my career, I’ve had the privilege of not only travelling through the great land of Italy, but also studying with some great Italian cooks. This is a homage to them. The innovators, the grandmothers, the farmers, the line-cooks that have been feeding hungry bellies with antipasti, pasta, fish, meat, endless contorni, fantastic wine (and pizza and beer on the weekend). With Legna, I hope to raise a glass to the land that gave us rolling hills, hot summers, wonderful people, and stunning food.
